I think my first pick would have to be Mark Martin. I have watched Mark since his ASA days. He has been consistantly low key, humble, and a nice guy thruout his career.

As promised...
I've more than one with whom I'd like to share a meal. First, maybe would be Jr Johnson or another of nascar's pioneers, just for the great stories they could probably tell. Bet the late, great Benny Parsons was good for an amusing anecdote or fifty.
Next, I'd probably want to cook a sophisticated, tasty, yet very health conscious meal for Jr, Smoke, et al, as the younger generation drivers reportedly rarely eat anything but fast, fat/sodium infused, nasty, processed junk food. Hello, regardless that "Little Debbie" (insert relevant sponsor name here) may be your sponsor, it doesn't mean you must appear as though she is so, give your arteries, blood pressure and cholesterol a rest, boys, hire a personal chef!
I'd probably enjoy dinner and conversation with Kyle Petty as I also enjoy talking literature and current events.
I think Bill Lester would be a great dinner guest as he'd no doubt have many enlightening opinions to offer.
Lastly, I'd have to include Jackie Stewart as I remember hearing his very distinctly-accented voice from 70's TV race broadcasts and would like to meet the man behind that voice.

I'd have to pick Kenny Wallace and hope that someone would be able to rescue me when I choke from laughing too much. Although I'm a big Earnhardt fan I think I'd be too star struck to be able to function. Kenny would be a blast!
